It depends on the cut and the cook. Dry rubs suit meats that go on the grill or the griddle. Marinades suit stewed and braised profiles like birria or cochinita. Injection systems suit whole muscle for ready-to-heat programs. A formulator matches the format to your equipment and your menu.
How do FSIS rules apply when a store kitchen uses these systems?
A grocery or carnicería kitchen that prepares meat for sale to consumers on the premises works under the retail exemption from FSIS inspection, 9 CFR 303.1(d). It follows its state and local retail food code. Meat processors apply the system at their FSIS-inspected establishment. FISA seasoning systems are FDA-regulated food ingredients.
Do you charge for samples?
No. Samples are at no charge and sized for bench testing. Send your target profile, your counters and your monthly volume through the sample request form. A formulator reviews the brief with you before anything ships. Test the profile on your own equipment before any store rollout.
Does a US tariff apply to these seasoning systems?
The rule is USMCA 0% tariff on qualifying blends. When a blend qualifies, it ships with a certificate of origin for your customs broker. Whether a blend qualifies depends on its formula. Ask a formulator about your profile when you send your brief. Every system is manufactured in Monterrey.
Who owns a private label formula?
The private label client owns its formula. We build the profile from your target sample, your ingredient statement or your written brief. Once you approve it, the spec is locked and every batch runs to it. Every reorder is made to that same approved spec for every store you supply.
